MENU1 Dyer Farms' balsamic poached pear, candied walnuts with bleu cheese crema 2 Avocado stuffed with Jones Boys' chorizo Chihuahua chees melted in wood-fired oven 3 Suckling pig taco, handmade tortilla with tomatillo salsa (credit to Chef Carlos De Leon) 4 Odelehr Farms' butternut squash soup with maple crème fraiche & sage infused olive oil 5 Jones Meat & Locker's sweetbreads, butter poached corn wheels, pancetta dust, Danenberger Family Vineyard's Rouge demi-glace and fennel prawns 6 Red Guajillo sauced pork on a bed of julienne romaine topped with scallion crème fraiche and pickled carrots 7 Cloyd's honey poached pears, with Danenberger Family Vineyard's Lumiére and cinnamon Madagascar vanilla bean reduction between wood-fired puff pastry.
