Melon, Mint, and Crispy Bacon Salad

Trust me it works. This simple recipe from one of our favorite local chefs, Denise Perry of Copper Pot Cooking Studio, perfectly pairs sweet with salty. In-season melons like watermelon, cantaloupe, and honey dew, fresh herbs, and crispy bacon all work together to bring the flavors of summer to your dinner table....or breakfast table. This could be your new favorite twist on a breakfast fruit cup!

1 bunch fresh mint

1 bunch basil 2 T lemon juice, from about ½ lemon 1/4 cup rice vinegar 2 cups watermelon chunks 2 cups cantaloupe or honey dew chunks

½ lb bacon, cut into chunks and crisped

1/4 cup pistachios, roasted and salted

In a blender, combine mint, basil, lemon juice, and rice vinegar. Blend until smooth. In a large bowl, combine the watermelon and the cantaloupe. Add the vinaigrette and toss. Season to taste with salt and pepper. Garnish with bacon, pistachios, and extra mint leaves. You can even throw in some sweet cherry tomatoes for an extra flavor punch. Enjoy!

Note: This picture features honeydew, but all types of melon, like watermelon and cantaloupe, work well. The important part is choosing a perfectly ripe, local melon.
